Using a stand mixer place all ingredients into the bowl and mix on medium speed until mixture is well blended and lightens in colour.
Grease and line either one deep or two shallow 6 inch / 20cm round cake tin(s).
Place cake in a preheated oven - 160°C fan or 180°C conventional for 45 minutes.
Place a knife or skewer into the center of the cake. If it comes out clean the cake is ready.
Take out of the oven and place on a cooling rack.
Once cold decorate with chocolate butter icing or covering of your choice.
