Cut the potatoes in quarters depending on the size of the potatoes. Place potatoes in cold water and bring to the boil. Boil for 10 mins.
Pre - heat oven to 220°C/200°Fan/Gas Mark 7. Place the butter in a baking tray and place in the oven until butter has melted. Drain the potatoes and toss in the flour - either put potatoes in another bowl and toss or if you have sieved your potatoes just sprinkle the flour over the top and then toss the potatoes in the sieve.
When the butter has melted add the potatoes to the tray and shake to cover the potatoes in the fat. Cook in the oven for 45 minutes - 1 hour or until the potatoes are a nice golden brown colour and cooked through.
Serve immediately or keep warm on a warmer plate or in a warm oven.
