Method

  • Cream the butter in a bowl until it is very smooth and soft. Sift over the icing sugar and add the caster sugar, then beat gradually into the butter. Add the Brandy, bit by bit, beating well after each addition while ensuring mixture does not curdle.
  • Spread out the butter on a sheet of foil, cover and chill in the fridge until firm. Keep chilled until you are ready to use it.
